One of the foods that my kids cant get enough of are nuggets! Chickpea nuggets, veggie nuggets, seitan nuggets, and tofu nuggets, it doesn’t matter because they are all a hit with my kids!

These tofu nuggets are absolutely delicious! The only problem with them is that there are just never enough of them! I suggest making a double batch and you really wont regret it, take my word!

Crispy Tofu Nuggets

1 block of firm tofu
1/4 cup chickpea flour
1/4 cup non-dairy milk
1/2 cup panko bread crumbs
2 tsp salt
2 tsp paprika
1 tsp black pepper

Preheat your oven to 400

First open and drain your tofu. Press out as much water as possible before moving on to the next step (to really improve the texture of your tofu consider buying a tofu press like this one). Cut your tofu into nugget sized pieces and place to the side. In a bowl mix together the chickpea flour, non-dairy milk, salt, pepper, and paprika into a loose paste. On a seperate plate spread out your panko bread crumbs.

Now submerge each piece of tofu into the chickpea flour mixture and then place on the plate of panko and coat evenly. once coated with the breadcrumbs place them on a non stick sheet pan evenly spaced apart. repeat until all the tofu is coated with both mixtures.

Place the sheet pan full of uncooked nuggets into a preheated oven until golden brown and crispy. Let cool and serve!
