The other day my daughter said that her favorite pizza was pepperoni…but when I thought about it she has probable only had a pepperoni pizza once in her life because the vegan pepperoni choices are pretty limited.

I decided its been far too long since she had her favorite food so I took what I already know of making faux meats with seitan and created this amazing pepperoni!

It came out better than I could have imagine and was a big hit with thew whole family so I am going to share the recipe with you here! Let me know if you made it and I will give you a shout out on instagram!

Homemade Vegan Pepperoni

Ingredients

1 1/2 cups vital wheat gluten
1 cup water
1/2 cup vegan chicken stock
1/2 cup TVP (Textured vegetable protein)
1/3 cup tomato paste
2 tbsp olive oil
3 tbsp paprika
1 1/2 tbsp garlic powder
1 1/2 tbsp sugar
1 tbsp steak seasoning
2 tsp cajun seasoning
2 tsp salt

Recipe

Place your TVP into a small bowl. Heat up your vegan chicken broth until it reaches a boil and then pour over the TVP, cover, and set aside.

In a large bowl mix together your vital wheat gluten, paprika, garlic powder, sugar, steak seasoning, cajun seasoning, and salt.

Set up your steamer and bring it up to heat while you perform the next step.

In a separate bowl mix together your water, oil and tomato paste. When combined pour over the wheat gluten mixture and incorporate with the TVP mixture. It should be a sloppy dough at this stage. start to knead the dough in the bowl to toughen up the gluten.

Split the dough into 4 equal pieces and shape into pepperoni logs. place the first log onto parchment and roll it up. Next roll up the parchment covered log in foil and twist the ends to seal like a sausage. Roll the log up in one more piece of foil and then repeat with the remaining pepperoni logs.

Place the foil covered logs into your steamer and cook for 1 hour. remove from heat and let rest until they are room temperature. Place them into the fridge for at least 1hr to help firm up and then they are ready to enjoy.

Slice it up and try it on pizza or mixed into burritos! Enjoy!
