Oh man do I love shepherds pie smothered in what some would call way too much gravy! Shepherds pie is a staple in our house and I tend to make each one different than the last. My favorite filling is made with TVP (textured vegetable protein) because I love the texture it creates and I can really control the flavor. But Ive made it with lentils, tofu, and all different meat substitutes as well. Thats the good thing about shepherds pie, you can get as creative as you want and it always comes out great!

TVP Shepherds Pie


4 large potatoes diced
2 cups TVP (textured vegetable protein)
4 cups vegetable broth
1 1/2 cups sweet corn
1 1/2 cups peas
1 cup non-dairy milk
4 tbsp corn starch (or other thickener)
4 tbsp vegan butter
1 1/2 tsp garlic powder
1 tsp salt


Preheat your oven to 425

Add your vegetable broth to a pan and bring to a boil. Pour 2 cups your hot vegetable broth over the TVP and stir to combine. Leave the rest of the broth on the stove to be thickened later. Cover the TVP and broth mixture until ready to use.

Bring your potatoes to a boil and cook until they are easily pierced by a fork. Strain the potatoes and return them to the pan. Add the vegan butter, non-dairy milk, garlic powder and salt to the potatoes and mash (I like to leave them a little chunky for the texture).

In the bottom of a large oven safe dish make a layer of the corn and peas. Next add in a layer of the TVP mixture. Top it all off with the mashed potatoes. Score the top of the mashed potatoes with a fork and sprinkle the top with paprika to garnish. Place the shepherds pie in your preheated oven and bake for 15-20 mins or until the top starts to brown.

while the shepherds pie is cooking in the oven heat up the remaining vegetable broth over medium heat. In a separate bowl stir together 2 tbsp of water and the corn starch. Mix the corn starch mixture into the hot broth and stir continuously until the mixture thickens. Turn it off and set to the side, it will continue to thicken as it sits.

Once the top of the shepherds pie starts to brown remove it from the oven. Serve with the gravy and enjoy!
