One of my all time favorite childhood meals was chicken parmesan! Being vegan, my tastes are still the same, just without the unnecessary cruelty. You can make this dish with any chicken substitute and it will come out pretty good. My favorite at the moment are the meatless chick’n patties that Aldi makes and my least favorite for this dish are the Boca chick’n patties (but even using the boca brand these will still come out better than you could imagine!).
Vegan comfort food will always have a place in my kitchen and in my heart. I just love how easy it is so I save meals like this when I don’t have time to make something more complicated.
Vegan Chick’n Parmesan
Preheat your oven to 450
The first thing you need to do after preheating your oven is to pre bake the chick’n patties. Place the chick’n patties into a deep oven safe pan, pop them into the oven, and bake until golden and crispy.
Take the pan out of the oven and pour in the pasta sauce and diced tomatoes. Coat each piece of chick’n in the sauce and then evenly place the shredded cheese onto the chick’n patties. Cover the pan with foil or lid and bake in the oven for 10-15 minutes.
Serve with your pasta of choice and you cant go wrong with a little garlic bread either!
